Oaxaca is one of México’s fifteen coffee-producing states. Villa Talea de Castro belongs to the administrative district of Villa Alta, in the Sierra Norte of Oaxaca. Located four hours away from the state capital, this is one of the most biodiverse areas due to its geographical and climatic conditions.Coffee is a significant agricultural product in the area. The trees benefit from the region's rainfall, which lasts for about 8 months, totaling over 1500 mm per year, and temperatures not exceeding 26°C.
Having several access routes, all of them involve winding roads half of which are paved and half are dirt roads. This situation creates new challenges for producers when its harvest time and they must to move the coffee from the farm to the purchasing station.
This Community lot from Talea de Castro was crafted by carefully selecting only ripe, hand-picked cherries. The cherries went through 48 hours of fermentation, preparing them for the pulping process. After pulping, they undergo fermentation in tanks for a period of up to 48 hours before being placed on patios for drying.
Local producers work with agroecological techniques. They have an average of 2 hectares each, with an average production of 4 quintals per hectare. The most commonly used varieties include Oro Azteca, Typica, Bourbon, Mundo Novo, Sarchimor, Marsellesa, and Geisha, among others.
To strengthen the participation of women, the inclusion rate in the group increases each year, currently standing at around 25%.
